The importance of a squeaky cheese curd has been emphasized to me from a young age, but I only recently learned the science behind the squeak.
The proteins in cheese curds are bound by calcium. The calcium-protein bond rubs against the enamel on our teeth producing the squeak sensation. After a few days, the binding starts to weaken which eventually silences the squeak.
