In 2001, Ian Gurfield founded the first Ian’s Pizza location in downtown Madison on Frances Street. Since then, the craft pizza spot has expanded to a total of nine locally owned and operated locations across Madison, Milwaukee, Denver, and Seattle (hey, SEAtoday .)
Revered as a favorite 608 late-night stop, Ian’s is known for its by-the-slice options and unique topping choices — think: cheesy potato + ranch, drunken ravioli, cubano. The Madison Garver and State Street locations also sell ice cream from Ian’s sister company, Calliope Ice Cream .

Now that we’re all hungry, let’s make some pizza.
Ingredients
- 1/2 cup grated mozzarella
- Dough for a 12-inch pizza crust (can use homeade, instant mix, or grab a dough ball from Ian’s )
- 1/4 cup creme fraiche
- 1 cup cooked elbow macaroni
- 1/2 cup grated cheddar (we used Babcock’s aged cheddar )
Instructions
- Preheat the oven to 500°
- Sprinkle the grated mozzarella evenly over your pizza base, then drizzle with creme fraiche
- Add the elbow macaroni evenly on top
- Cook for about 8 minutes — until the pizza base cooks through and the cheese melts
- Remove from the oven, sprinkle with cheddar, and pop it back in the oven for a few minutes to melt the cheese
